Sung Choi Bao

Celebrate the Chinese New Year with this simple and tasty pork recipe that is super quick to make.

Ingredients

300g lean beef or veal mince
300g pork mince
1 crushed garlic clove
1 x 230g can of drained and finely chopped water chestnuts
1tbsp peanut or vegetable oil
2tsp fresh ginger, finely grated
60ml oyster sauce
60ml soy sauce
4 trimmed and finely chopped green shallots
100g bean sprouts
12 washed and dried iceberg lettuce leaves

Instructions

1. Heat the oil in a large fry pan over medium-high heat and add the pork and beef or veal mince. Use a wooden spoon to break up any lumps and cook for five minutes until mince changes colour. Add the ginger and garlic and continue to cook for another minute until fragrant.

2. Add the green shallots and water chestnuts and cook for a minute, stirring continuously until thoroughly combined. Stir in the soy and oyster sauce and cook while stirring for another two minutes until thoroughly heated through. Remove from heat and add the bean sprouts, stirring through until just wilted. Season to taste and transfer to a serving bowl.

3. Arrange the lettuce leaves attractively on a serving platter. Serve straight away with the mince mixture.
