Lemon Pepper Chicken

Ingredients

450g halved, skinless, boneless chicken breasts

½ cup all-purpose flour

2tbsp extra-virgin olive oil

1tsp salt

½ cup chicken broth

1tbsp lemon pepper seasoning

2 minced cloves garlic

2tbsp butter

2 lemons

Freshly chopped parsley

Instructions

  1. Preheat oven to 200°C and whisk together lemon pepper, zest of one lemon, flour and salt. Toss chicken breasts in the flour mixture to coat and thinly slice remaining lemon.
  2. Heat oil in a large ovenproof skillet over medium-high heat and cook chicken in a single layer until golden on bottom, for approximately five minutes before turning over chicken breasts.
  3. Add the broth, garlic, lemon slices and butter to skillet and bake in the oven until chicken is cooked through and sauce is reduced slightly, for approximately 15 minutes.
  4. Serve chicken with sauce spooned over and garnished with fresh parsley.
